I've had deep fried catfish twice in the last 10 days. It's delicious.
Catfish Tidbits

Serves 4 to 6 as an appetizer1 pound catfish fillets
1 cup all-purpose flour
1 teaspoon cayenne pepper
½ teaspoon salt
Freshly ground black pepper
2 beaten eggs
1 cup breadcrumbs
¼ vegetable oil
- Rinse fish under cold water. Cut into bite-size pieces.
- Mix flour and seasonings and place in a plastic bag. Add catfish pieces a few at a time and shake bag until fish is well coated.
- Remove pieces from plastic bag, and dip flour-coated fish in beaten eggs and drain off excess. Then dip in breadcrumbs.
- Heat oil in a frying pan. Fry fish a few pieces at a time until golden brown. Drain pieces on paper towel.
- Serve with your favorite spicy cocktail sauce for dipping.
